Apex Santoku #2
The ultimate chefs knife, this is the Apex of not only your kitchen, but of all other chefs knives. Forged from a feat of modern day metallurgy, Apex-Ultra, a “super steel” that combines two distinct features otherwise impossible to find in the same blade.
Number one is the Rockwell hardness. This blade is at an absolutely staggering 67 HRC. That is quite literally off the charts of any other carbon steels out there, even the best Japanese steels. And most chefs knives out there top out at around 62, maybe 63 if you’re lucky.
Now typically, a high Rockwell introduces a major problem, brittleness.
That’s where Alex-Ultra truly shines.
Specifically designed to maintain remarkable toughness at off the chart levels of HRC, Apex-Ultra won’t chip or snap even though it’s at such a high hardness.
Thats what makes it so remarkable.
Typically the trade off in a chefs knife is hardness vs toughness. And you have to choose one or the other. Apex ultra truly gives you both in one blade, which is genuinely unheard of before now.
This steel is in extremely small production, and was quite challenging to source. I only have a handful of blades from the stock I was able to get, and it may be some time before I get it in stock again.
And for all the qualities that make it such and exceptional blade, also make it an absolute nightmare to forge, heat treat, and grind. But man oh man is it worth it.
This piece is at 7.25” blade length, and just shy of 2.5” width at the heel. The brute de forge style balances perfectly at the handle/ blade transition, and the jade green G10 grip gives some grip even when wet.
Thanks for looking 👀
